October 25, 2018

ねぎソーセージAt Faculty of Humanities and Social Sciences, the seminar of Associate Professor Teshigahara Takayuki, who works on social business and urban development, has developed a new product, "Green Onion Sausage."
In the Teshigahara seminar, students learn practical ways to understand and solve local issues through activities such as participating in local revitalization events in Chiba Prefecture and product development aimed at promoting local specialties. To date, they have commercialized products such as "green onion dressing" and "green onion pickles" using ingredients from Chiba Prefecture, and will further contribute to the revitalization of the Chiba region with their next new product, "green onion sausage."

point

  • Students from Teshigahara's seminar came up with the idea of "Green Onion Sausage," a combination of green onions and sausage, based on their past product development experience and connections with partner companies and local people. Together with one of the partner companies, "Food Shop Ichihara" (Sanbu District), they considered the selection of ingredients to be used, the processing method, and the shape, and after repeated trial production and tasting, they finally commercialized the product after about five months. They also came up with an original way to eat the "Green Onion Sausage" by adding "Green Onion Dressing" after cooking it.
  • The new product, "Green Onion Sausage," is made from "Azuma no Takumi SPF Pork *" produced in Tonosho-machi, Katori-gun, and green onions from Chiba Prefecture purchased by "Food Shop Ichihara," which processes pork. Only available in winter, the product uses green onions from Sanmu City that are organically grown by "Sanbu Vegetable Network" (Sanmu City).
*SPF pigs: Pigs that are free of specific pathogens that have adverse effects on the human body. They are raised on farms under strict management to prevent infectious diseases.
  • The cost of developing this new product is funded by the sales of products developed in the past, such as "Green Onion Dressing." The development of new products is made possible through this cycle. In addition, in order to ensure continued sales and return profits to the local community, we negotiated with the community space and cafe "Cocokara" in Sanmu City as a sales and supply destination, and decided to make it a permanent menu item.
